Est\u00e1n aquellos que preparan los cerdos o lechones enteros pero son muy pocos y generalmente lo hacen para ocasiones especiales. Fuera de eso, no existe en nuestra cultura sudamericana la utilizaci\u00f3n de cortes de cerdo como s\u00ed lo hacemos con los cortes de res. Tambi\u00e9n es bueno que entendamos como regla general que cualquier corte de cerdo, si lo comparamos con su hom\u00f3nimo de res se cocinar\u00e1 antes y esto no tiene que ver con el tama\u00f1o, si llevamos los cortes a kilos, el cerdo, al ser una carne m\u00e1s magra cocinar\u00e1 antes. Eso s\u00ed, siempre y cuando tengamos la sapiencia y la destreza de sacar el cerdo en su punto: perfectamente dorado en su exterior pero jugoso en el centro. Si se decide cocinarla con piel es bueno realizarle previamente unos cortes en forma de rombos y condimentar uno o dos d\u00edas antes con sal gruesa, aceite de oliva, ajo y hierbas frescas. En la parrilla, primero darle una cocci\u00f3n a fuego suave pero que dore perfectamente su superficie, luego de eso envolverla en papel aluminio doble e ir rot\u00e1ndola a fuego moderado de manera uniforme.
